Buzzy Heights bagel shop rebrands after founding baker’s surprise exit
Zac Wilson, owner of Brazos Bagel, has parted ways with his business partners shortly after opening a new bagel shop in the Heights, which will now proceed as Space City Bagels. The decision came after the team realized they had different expectations regarding daily bagel output. Wilson’s traditional bagel-making methods were unable to meet the demands of the busy shop. Despite tripling their daily output since their previous pop-up, they fell short of the intended 60 dozen bagels per day. However, Wilson is optimistic about the future of Brazos Bagel, planning to continue to supply local businesses and return to focusing on making high-quality bagels.
