2 resturants, 5 food trucks planned – NBC Chicago
Cousins Maine Lobster, the quick-service restaurant and food truck operator famous for its lobster rolls, has announced its expansion into the Chicago area. The company plans to open two restaurants and launch five food trucks, with the first truck set to begin operating in early 2024. Cousins Maine Lobster became popular after an appearance on ABC’s “Shark Tank” and a subsequent partnership with investor Barbara Corcoran. The company started with a single food truck in 2012 and by 2016 had reached $20 million in sales. The expansion will be led by franchisees Yunus and Thameem Shahul.
